Yum, blueberry season is here! The weather is getting warmer and the berries are starting to roll in. Blueberries taste delicious, and can easily be frozen for cooking, or eating as a cool treat. In addition to taste, blueberries are very powerful in vitamins and minerals. For such a small fruit, blueberries really pack in the Vitamin C, which is necessary for tissue and growth, and blueberries contain manganese, which helps the body process carbohydrates and protein. Blueberries are low in calories, only 80 calories per cup, and rich in dietary fiber.
SUPER LEAN BLUEBERRY MUFFINS
Makes: 12 muffins; 120 calories per serving
Two muffins equal: ½ oz. lean protein, ¼ fruit, ½ starch
INGREDIENTS:
- 4 eggs
- 2 apples, chopped (with skins)
- 1 teaspoon baking soda
- 4 tablespoons vanilla extract
- 1 cup vanilla protein powder
- 2 tablespoon non-fat milk
- ¼ teaspoon nutmeg
- 2-3 tablespoon sweetener
- 1 cup oat bran
- 1 cup frozen blueberries
DIRECTIONS:
Mix all of the above except oat bran and blueberries. Fold them in last. Spray muffin tins with nonfat cooking spray. Fill each cup full with batter. Bake at 350 degrees for 35 minutes or until brown. (Don’t use paper cupcake holders-they stick!)
