Nut Butter and Banana Sandwich

This concoction is a healthier take on out very own ‘Elvis Sandwich’. All you have to do is use an unsalted, sugar and saturated oil free kind of butter, almond if you like and enjoy your bacon in breakfast. Toast two slices of brown bread and butter them. Arrange sliced bananas on one slice and top it up with some maple syrup to make it moist and sweet. Brown bag goodie, isn’t it?

Tuna Cottage Cheese and Potato Salad

Most often than not, you will already have all the ingredients for this one. It is oil free and rich in carbohydrate and protein. Makes for an ideal tasty working-day lunch option.

Bake a jacket potato is an oven till it is soft. Make a mixture with grated cottage cheese, sliced canned tuna, chopped spring onion and coriander, and halved cherry tomatoes. Season with salt and pepper. Cut the potato in half and fill it with the mixture.

Avocado Club Sandwich

Rich in Vitamin B, K and E, avocado is something you want to include in your diet more often. Making a club sandwich with it is one of the easier ways to do it. Take three slices of rye bread and spread mustard or mayonnaise on them. Layer two slices with turkey, rocket leaves, sliced avocado and cherry tomatoes. Place on top of each other and cover with the last bread slice. Your quickest sandwich is ready for the go!

Corn Rice

Have some left over rice from last night? Make it into a mouth-watering lunch. Cook sliced baby corn, peas and spring onion in a little bit of oil. Once soft, tip the rice into the skillet and add salt and white pepper according to taste.

Scrambled Eggs with Muffin

How can we have an easy and quick lunch list without eggs! For this one, all you need is to toast half of an English muffin with cheese for a melt in your mouth feel. Put some tomato and spinach on the other half and finish it with placing egg white scramble in between the two layers.
