What is Gluten?
Gluten is a protein that occurs naturally in nearly all types of grains. While gluten in most grains is of no particular health concern, the type of gluten that occurs in wheat, barley, and rye can be harmful to those who suffer from Celiac Disease or Non-Celiac Gluten Sensitivity.
Why go Gluten-Free?
Celiac Disease (CD)
Celiac disease causes failure to digest the essential nutrients found in foods, due to gluten triggering a sensitivity to the small intestine. It is estimated that about 1 in 133 people have Celiac Disease and about 83% are unaware or misdiagnosed. The only treatment for those who suffer from CD is to eliminate the intake of gluten.
Non-Celiac Gluten Sensitivity (NCGS)
It is found that about 6% of the population suffer from Non-Celiac Gluten Sensitivity. The symptoms associated with NCGS are similar, yet less severe than the symptoms associated with Celiac Disease. However, a person who suffers from Non-Celiac Gluten Sensitivity does not lack the antibodies and intestine damage that is seen with Celiac Disease.
