Bacon-Wrapped Pork with Mango Salsa

The only thing better than pork tenderloin with a sweet mango salsa? The same, wrapped in bacon! Bonus: Prep time is just 25 minutes.

Ingredients
- 1 Pork Tenderloin (1 lb.), cut into 4 pieces
- 4 slices OSCAR MAYER Bacon
- ¼ C KRAFT Zesty Italian Dressing
- 1 Mango, chopped
- ½ C Red Peppers, finely chopped
- 1 Green Onion, finely chopped
- 1 Tbsp. Cilantro, fresh and chopped
- 1 Tbsp. Lime Juice, fresh
Instructions
- PRESS each meat piece into 3½-inch medallion. Wrap bacon slice around edge of each medallion, secure with wooden toothpicks.
- HEAT large heavy skillet sprayed with cooking spray on high heat. Add meat; cook on medium-high heat 5 minutes. on each side or until done (145ºF). Meanwhile, combine remaining ingredients.
- REMOVE and discard toothpicks from meat. Let meat stand 3 minutes. Serve topped with mango mixture.

Testing for Doneness in Pork
To be sure pork is fully cooked, check the internal temperature with an instant-read meat thermometer. Insert the thermometer 2 to 2½ in. into the thickest part of the meat, not touching any bones - it should read 145°F. If checking thinner pieces, such as pork chops, insert the thermometer through the side of the meat. After pork registers 145ºF, remove from heat and let it stand 3 minutes before serving.
