The Delightful Juicing of Watermelon!
by Carolyn Bell, RDN
Purchase fresh watermelon, scoop out the melon and place it in blender until it becomes juice. Strain the watermelon (to eliminate any pulp) as you pour it into a pitcher. Next, add a handful of mint leaves to the watermelon juice, pour and serve it over ice; yum! A delightfully fresh, summer juice, and just in time for fourth of July celebrations. Watermelon is refreshing, perhaps because 90% of a melon is water; yet it has the sweet taste that accompanies watermelon.
