Spring is here! This is an exciting time of year when grocery shopping. Springtime vegetables are starting to appear and veggie lovers won’t be disappointed with the beautiful array of choices in the grocery store. Artichokes, asparagus, beets, lettuces, peas and radishes are delightful this time of year. The weather is beautiful enough to encourage outdoor grilling and asparagus is a favorite of mine for grilling. Simply wash and clean your asparagus spears, chop the bottom “woody” stems off and then place the asparagus in a re-sealable plastic bag. Next, add a little olive oil, sprinkle your favorite seasoning and gently roll the asparagus around in the sealed plastic bag to cover with the oil and seasoning. Last, fire-up the grill (I like mine at about 350˚) and place your asparagus on a grilling pan, or wrap it in aluminum foil, to grill for approximately 12-15 minutes. Finally, you can sprinkle a little fresh parmesan cheese for added flavor. Delicious!
